orange chicken curry
orange chicken curry (serves 2-4)
Ingredients
2 skinless boneless chicken breasts
1/4 cup orange juice concentrate
1/2 clove garlic
1/2 onion
1tsp curry powder
2-3c white wine
Directions
- defrost chicken (if neccesary)
- finely chop garlic
- chop onion
- cut chicken into small cubes
Saute onions and garlic in olive oil until translucent/slightly browned over medium. Add white wine to the onions and garlic while raising the heat to med-high. Add curry powder and orange juice concentrate to the wine sauce, stirring well. Add salt/pepper/curry/sugar to taste then add the pieces of cubed chicken to the sauce. Allow the chicken to cook completely; make sure the sauce had reduced and doens't have a strong alchohal smell to it.
Serve over your favorite rice.( I found that Thai jasmine works well).
