Banana & Date Loaf
Makes about 8 to 10 slices
Ingredients: 75g (3oz) golden syrup
25g (1oz) soft brown sugar
1 medium orange, grated rind and juice
50g (2oz) Stork 73% Vegetable Fat spread
1 large egg
pinch of salt
100g (4oz) whole-wheat flour
1 level teaspoon baking powder
75g (3oz) Julian Graves dates, finely chopped
50g (2oz) Julian Graves sun dried banana, finely sliced
Method: Preheat oven to 160C (325F/Gas mark 3)
Grease and line a 450g (1lb loaf tin)
In a bowl place syrup, sugar, orange juice, rind, vegetable fat spread, egg, salt and half the flour. Mix with a food mixer or a wooden spoon, beat for 1-2 minutes or until smooth and glossy. Add remaining flour, baking powder, dates and banana. Stir gently but thoroughly.
Pour into tin, sprinkle surface with demerara sugar. Bake in oven for 1 hour or until loaf is firm to the touch.
To Store: Place in an airtight container and store for up to about one week. Freeze in a plastic container or a sealed polythene bag for up to three months. Defrost at room temperature for about 2-3 hours.
