Steel ratings

Could anyone explain the steel ratings I see attached to blades (ie 1050 carbon steel, 440 stainless steel ect), and also the differences/benefits of folding or forging blades?

EDIT: An explanation of edge hardness (RC rating) would also be helpful, thank you!
