It depends on the game. If it's a story-based game, I'll play on easy or normal because really I just want to get through the game. I never play a story-based game a second time though.
If it's something like UT or Quake with a multi-player mode, which I want to get good at, I'll start on normal or hard and progress to the higher levels as I learn the maps.
