if she wants a lot of room and is travelling with a dog, I think she's end up not liking an SUV. They don't have as much room as their size would indicate. Why not look at a conversion van? You can get 'em cheaper than most SUV's, they're much nicer inside, and they have a LOT more room. If you get a ford with the V6 option, you'll get around 600 miles per tank. They're perfect for the long trips.
If she insists on an SUV, I'd look at the Acura MDX.
