I was only in Dublin for two days and did not get to see all that I wanted to. You need to see Trinity College and while there go to the library and see the Book of Kells (the oldest existing copy of the gospels dating back to the 7th century). Near there is a park that if my memory is correct is called St Stephens's Green. It is worth a walk through. Get some food and beer in the Temple Bar area. We ate at Gallager's Boxty house the second night because the first was so good.

Don't try to see all of Ireland in anything less than 3 weeks. I was there for 11 days and concentrated on the west coast between Killarny and Galway; and I think that was too ambitious. I would recomend trying to fit in the Dingle penninsula in the Southwest corner.
