Talk to the alumni association at your college and see if they'd be willing to refer you to some graduates from your school. No guarantees that they'd fit whatever profile you're looking for, but since it's for a school project at the school they went to, there's a better chance they'd be willing to be interviewed.

Also, you could talk to high school students to see what their expectations are after college, or even if they're going to college. That could be arranged through the administration of a high school near you.

As far as getting people excited and willing to be interviewed, sell them the documentary aspect of it. Sure, it's a school project, but it's a documentary first. From experience, if you act the part of the veteran filmmaker, people will believe you and be more willing to help.

P.S.: I'm sure you already know this, but make sure you get releases from everyone you interview.
