Garlic Roasted Chicken and Potatoes
 
I posted this on v.3 and it seemed to be well-received...


1/3 to 1/2 stick butter or margarine
6 medium-sized chicken legs
6 medium sized red potatoes
24 garlic cloves, unpeeled
1/4 cup maple syrup

About 1 1/4 hours before serving:

1. In a large roasting pan in 400 degree f oven, melt butter or margarine. Remove pan from oven.

2. Meanwhile, cut chicken legs apart at joints. Cut potatoes into bite-sized chunks.

3. Place chicken pieces, potato chunks, and garlicc in the roasting pan; sprinkle with 1 teaspoon of salt. Turn ingredients to coat with the melted butter or margerine; arrange chicken pieces skin-side up.

4. Bake 40 minutes, basting the chicken and potatoes after about 20 minutes with the drippings in the pan. While this is cooking, mix maple syrup with 1/2 teaspoon of salt.

5. After 40 minutes, take the pan out of the oven and brush all the maple syrup over the chicken and potatoes; bake 20 minutes.

6. To serve, arrange the chicken, potatoes, and garlic on a large, warm platter. Let each person cut through the garlic skin and spread the soft garlic-meat onto the chicken and potatoes. This recipe will serve 6 people. The amount of chicken and potatoes you use can be adjusted by the amount of people eating, but the cooking time remains the same.

I usually serve this with fresh green beans as a vegetable.

This is absolutely the BEST chicken recipe I have ever found...

i don't cook much but i tried this. it was really good. i used a whole separated chicken and added onions. and served with lima beans. very well received.

I tried this last night. Worked out very well, everyone liked it a lot.

Only problem is my boss is complaining I smell like garlic today :)

This sounds really great. I think I'll try it and steal laxative's idea and throw in a bunch of onions too! :)

This sounds really good! I think I may try thigh cutlets vs. legs though since they are about the same consistency but tend to be a little more uniform in size. What the heck...I'll try both! I've always been a leg man anyway...yuck yuck yuck!! :lol:
