Perhaps the easiest thing to do would be to whisk together a little olive, a little balsamic vingar (preferably aged or reduced) and a little kosher salt. I can't give you exact measurements, since I always go by taste and appearance. With spinach, you can always add some toasted pignoli or (if you eat meat) a LITTLE bacon/grease to the recipe. I've never tried the bacon personally (ovo-lacto for 2.5 years), but I prepare it for the family and they love it! |
Chinese Salad Dressing
This is excellent. 3 tbsp peanut oil 3 tbsp soy sauce 3 tbsp rice wine (sake) or dry sherry 3 tbsp wine vinegar 3 tbsp orange juice 3 tbsp lemon juice 1 tbsp sugar salt and pepper to taste 1 tbsp sesame seeds 1 tbsp chopped ginger root 1 tbsp chopped garlic Finely chop the ginger and garlic. Blend all ingredients well. Chill for an hour to allow flavors to blend. This is much better than the ginger dressing used in some Japanese steak houses. |
Here's a great Spinach Salad recipe
- Salad - Torn spinach leaves (preferably baby spinach) - 1/2 small red onion, thinly sliced - 1 Seedless navel orange, in sections - 1 Blood orange, in sections - 5-6 Strips cooked bacon -Dressing - 2 tbsp Orange juice - 2 tbsp White wine vinegar - 3 tbsp Olive Oil - 1 tbsp chopped cilantro - 2 tsp Honey - 2 tsp Dijon mustard - Salt + Pepper Toss all the salad ingredients together, if you can't find blood oranges, just use an extra regular orange. Sliced mushrooms go well in there too. |
