Anyone out here live a Gluten Free Life?
I am just curious if anyone here is living a gluten free life. I ask since my girl friend was just diagnosed with celiac (gluten allergy). She is having a great deal of trouble since she is already a picky eater to find things to eat. If anyone out here is I would love to get some ideas for quick meals.

Picky eaters with dietary restrictions is tricky.
Here are 2 sources you could try: Akins Diet- These recipes are all cab free so no gluten. She could add a potato or rice for her crabs. Asian food- Many Asian dishes use Rice as there primary starch so there is no gluten problem. There is a good fried rice thread here, that is quick and essay. Two dishes that a friend of mine has made (he was on Akins) that were quick and yummy. 1. Replace pasta in a meat sauce with egg whites (these should be hard boiled and cut up) 2. Now this one is a little strange but I love it and make it for myself. Ground Turkey burger with slice of red pepper and mustered Rapped is Seaweed paper (the kind used for Sushi) Good luck |

Thanks Clark... for some reason your recipe links are showing up.
It is just a challenge since I eat everything in sight. She she was just diagnose with this allergy it is a bit of a challenge. She has developed slight reactions to many things which include eggs, nuts, and soy. All problematic, but we are slowing finding things that work. Thanks again. |

I am not gluten free, but I did work in a kitchen that catered to quite a few gluten-free people. Granted I am typing this drunk and high, it could be a teeny bit off.. so
Anyways we used to cook a dinner that consisted of 4 seperate courses. We therefore had the ability to cater to everyones needs. Gluten Free people cake alot, and we would bake or cook a variety of things for them to eat. Basically we subbed 'rice' products as much as power. Soy also works well. From muffins to a starch alternative with their lamb chops.. we did it all. Feel free to reply here or PM me. (hopefully I'll be sober!) Good Luck!
