Dutch Oven
Does anybody cook in cast iron. If so please share some recipes that go well in a dutch oven, and I'll do the same.
I haven't seen a cast iron thread, so I hope I'm not duplicating anything. |
Heehee. Sorry I had to laugh when I saw this thread.
A Dutch Oven where I come from, is when you fart under the blankets in bed, then lift them over your partners head to 'cook them' I guess you dont want one of those, though? |

4lbs sliced yam,
1 huge onion garlic 3 or so beers, set in coals. shovel coals on top of the oven, wait 45 minutes, keep checking until done. goes great with any meat |

What do you want to cook, and how? Most people don't because most don't know how. You are talking of the big black pot over the fire? Stews and that kind of thing?

We've got a dutch oven, and a basic tip for recipes seems to be the following:
Have lots of coals handy, and recipies that allow for simmering and include a broth have so many different possibilities there's no way to go wrong. A favorite of mine is Farmer's Breakfast, which has scrambled eggs thrown on top of bacon, ham, potatoes, cheese, and sausage that have been steaming in hot wate with a little bit of beef broth. Great way to warm up in the morning. |
Potatoes are probably the most popular side dish. I've never tried them with crumbled sausage.....I'll have to give it a whirl. Try sliced mushrooms in them...a very good addition.
The breakfast also sounds very good. We made a similar one a couple of months ago with eggs, hash browns, peppers, cheese & mushrooms. An easy chicken main dish that doesn't require much work is: -Season chicken (maybe with shake 'n bake and flour) -Sear in hot oil (only enough to create seared skin, so it holds together) -Stack chicken in the pot (I use a mushroom and onion trivet so the chicken isn't directly touching the bottom of the pot...plus it adds flavor.) -Keep the bottom of pot covered with beer. -Slowly simmer until chicken is done (45 - 75 minutes generally) The chicken will melt in your mouth. I love using a dutch oven to make bacon in the morning. layer a l package or 2 of bacon in the dutch oven. Make the 1st layer of the bacon facing the same direction then lay the next perpendicular to the previous making cross hatch layers. Pop it on the coals and cover the lid with coals. The bacon will cook in its own fat to perfection.

Dutch oven cooking is very popular in scouting.
PM me if you'd like and I can send you a number of them. Couple quick ones: For dessert - cobbler. 2-3 cans of fruit pie filling. Apple, cherry, peach or whatever you like. (my favorite is 2 cans of apple, 1 of cherry) 1 box yellow cake mix. Pour in the fruit filling, make the cake mix to directions and pour on top of filling. Cook for about 30 minutes or until cake mix is done. Another simple recipe is to take shredded chicken, 1 can of chicken broth and 2 cans of can veggies and a box of Bisquick or orther powdered biscuit mix for a nice chicken pot pie. It prepares in much the same way, chicken and veggie mix in first and then biscuit mix on top. In this case it is a good idea to cook the chicken mixture a while first before putting on the crust. |
