Ginger Chicken with Mushrooms
1 3 inch piece of ginger, cut into matchsticks 1 breast of chicken, skinned and chunked 1 package small crimini or button mushrooms, cleaned 1/8 cup dark soy sauce 1/8 cup regulary soy sauce 2 tbsp sugar 1 scallion, chopped 3 tbsp vegetable oil (i use peanut) Soak ginger in a cup of cold water with a few ice cubes. Heat oil in a large skillet over medium-high heat. Brown chicken and remove from skillet Drain ginger. Place ginger and scallion (white part only) in the skillet and stir fry for two minutes. Add mushrooms, cooking for another six minutes. Return chicken to skillet, and add soy sauces and sugar, stirring to coat. Garnish with remaining scallions and serve with rice or over noodles. Serves 2-4. |
