spicing up spaghetti
what spices can i put into spaghetti to give it some extra kick? the last time I made it i used the garlic ragu spaghetti sauce, but it was still a little flat?
or change the sauce? what sauce do you people use on spaghetti? |
Cilantro for flavor, some chiles for spice.
Buy a head of garlic and chop or press it into the sauce if you like garlic, cloves are more potent if they are fresh from the clove, not sitting in a sauce on a shelf with preservatives for a few months. I generally make my sauces from scratch with pureed and chopped tomatoes, as a base... |

i tried it out with dinner tonight and my roommate loved it the cilantro and garlic were perfect its surprising how much better stuff tastes when you put a little work into it instead of just dumping in sauce :D im proud of it all |
you may have already tried this, but most italians will put some cracked bay leaf into their red sauces... also try (if you're pureeing) adding sauteed onions and carrot. In meat sauces, a very few specially placed cloves can do some good

Try Emeril's sauce in a jar, it's really good just the way it is. My favorite is the kicked up red pepper and the roasted gawwlic.

I didn't hear anyone mention fresh basil. Also, roast your garlic first for a twist. A little sugar takes away some of the acidity. A few carrots cooked to death from the beginning adds a certain smoothness to certain sauces., but not the lump marinara.

Try adding some fresh ground Spicy (or Sweet) Italian Sausage to any sauce. Good stuff. Chopped Onion and Peppers add flavor.

simple sauce......
2 16 ounce cans whole peeled plum tomatoes 1 small onion diced 2 cloves garlic minced 2 T extra virgin olive oil 1 T crushed red pepper flake 1 T fresh ground black pepper splash dry white wine...about 1/2 cup sauté onions,garlic an pepper in oil on med-high heat...this allows the oils in the pepper to bloom splash in your wine, let reduce a bit, then add your tomatoe bring to boil, then simmer 20 min taste an season with salt, an add a pinch of sugar if you like it sweet when done add FRESH chopped basil,oregano & thyme.... about 1/2 cup enjoy ;) |
