My yummy guacamole!
 
Well, here is a recipe I have made for a looooong time!

-one avocado
-garlic powder
-salt
-pepper
-fresh lemon juice (about a quarter of a large lemon)
-teaspoon mayonnaise (optional)
-a bit of chopped up onion (optional)
-tortilla/corn chips, like fritos or tostitos.
-FORK! to mash it all up.

Now, you take the avocado and mash it up into paste-y stuff, but there can still be a few bumps and lumps. Then you shake in some garlic powder liberally- depends on how much you like (you can use fresh crushed garlic cloves as well for that little extra kick. :crazy: ). Then you shake a dash of salt and pepper in for a bit of colour and stir it around a bit. Then squeeze the lemon into your mixture and stir again. If you like the taste of mayonnaise or onion, add that and stir again. Voila!! Chomp it all down with your chips, and hopefully some good company to chat with!! :icare:

The best thing about this recipie is there's no tomato! Better dead than red! :)

Here is a little hint to prevent browning if it has to sit a minute. Of course the lemon juice is the most important antibrowning part. It try to put it in a container with a relatively narrow top. Then I spread the mayo over the top. When I am ready to serve, I stir in the mayo and transfer to a bowl.

We use almost the same recipe, we just add a bit of our favorite salsa. We don't use any mayo, but friends use yogurt and its good too.

Use plastic wrap mashed onto the top to stop the darkening.

Yea, as Boo said, you can put plastic wrap directly on top of the guac to prevent the browning. Sour cream is a good substitute for mayo, but I don't use sour cream or mayo at all, unless I need to stretch it for alot of people. Sounds like a great recipe tho!

yea, i usually use sour cream but mayo sounds kinda good... also i like to put some cilantro in there and put it all in a food processor... then it gets kinda creamy and the cilantro adds a good flavor.
sometimes i like chunky guacamole... other times im in a creamy mood

Nice recipe -- I, too, don't see the need for tomato, or even cilantro as some add in these parts.

My personal recipe is extremely simple, and is for those who love garlic:

Two avocados
Five or six cloves of garlic (or more!)
Lemon juice
salt

Peel and crush the garlic. Mash the avocados add the lemon juice, and work it in -- half a lemon will do.

Get the mixture smooth, taste it, then add whatever amount of salt floats your boat.

Tastes great. If you want a little spice, shake in some red pepper sauce, again to taste.

Thanks for the recipes. I will be trying some of these out on Superbowl Sunday. How many Avacados do you recommend per person, average?

avocados can be expensive, and if you are makin it for superbowl, chances are there is going to be alot o people there. Id say 1 avocado per person.. that is, each person you think will eat the guac.. and then stretch it with some mayo or sourcream. The more shit you put in it, like tomatoes, will make it yeild more so you wont have to spend as much on avocados.
