Recipe of the Day - November 28 (cantaloupe soup)
Cantaloupe Soup
Ingredients 2 pounds Cantaloupe peeled and chopped 1 tablespoon Lemon juice freshly squeezed 3/4 cup Sparkling Apple Juice Raspberries Mint sprigs Preparation Purée cantaloupe with 1 tablespoon lemon juice in a blender until very smooth, about 2 minutes. Stir in juice, season with salt. Ladle into serving bowls and garnish with mint sprigs and fresh raspberries. Serve immediately. Serves 4 |
