Lemon Chicken
 
Lemon Chicken

Ingredients:

1½ pounds chicken, boneless, skinless breasts
2 large lemons
1 head roasted garlic
1 tablespoon olive oil
pinch kosher salt
pinch white pepper
1 tablespoon fresh basil

Rinse and dry the lemons and zest them onto a piece of wax paper.
Then cut them in half and squeeze them into a measuring cup, removing the seeds.
The two lemons give about 3 tablespoons of juice.
Add the zest, garlic, olive oil, salt, pepper, and basil and stir.

On a large piece of wax paper place 4 rinsed pieces of chicken breast halves.
Cover with another large piece of wax paper and using the flat side of the mallet, pound the chicken pieces to an even thickness.

Place the chicken into a resealable plastic bag and pour the marinade in.
Move the chicken pieces around to coat well and then seal the bag.
Place the bag into a large bowl and refrigerate for about half an hour.

Pre-heat the gas grill and then place the chicken on the grill, discarding the marinade.
After a few minutes, turn with tongs and continue to cook until the chicken is just cooked through.
The total cooking time is 6-8 minutes, depending on the size of the piece of flattened chicken.

you can use plastic wrap to pound the chicken, its usually more forgiving then wax paper, and probably costs less too.

Sounds great. Thanks for sharing. Anything with lemon or chicken works for me (my fave is francese). I don't post in here often because I always have to look up all the terms I'm completely clueless about. (Uh, like zesting a lemon. You learn something new every day!)

sounds like something i could make for my bf sometime..

except we have no grill.

other suggestions/options? oven? (no broiler either)

Sautee. Can deglaze with a white wine or equivilant for a decent pan sauce too.
