Grilled Avocado Quesadilla
Ingredients 3 Avocados Halved Fresh lime or lemon juice (as needed) Olive oil (as needed) Salt (as needed) 1 1/2 ounces Manchego Cheese, shredded finely 1 ounce Panela Cheese, grated 1/2 ounce Cotija Cheese, shredded finely Freshly ground black pepper (as needed) (about 3) Poblano chiles, roasted, peeled, cut into thin strips 3 Home-made or home-made style flour tortillas Unsalted butter (as needed) Salsa fresca (as needed) Preparation Cut each avocado half into 5 or 6 slices about 3/8 inch thick Brush each slice on both sides with juice and oil Lightly sprinkle with salt Grill, turning once, until lightly browned with grill marks Mix cheeses thoroughly Put 1/4 cup cheese on half the tortilla On top of cheese evenly distribute about 8 poblano strips Top with 4 or 5 avocado slices Drizzle with 1 tablespoon salsa (optional) Top with 1/4 cup cheese mixture Brown quesadilla on medium heat in hot butter on both sides Cover pan for a minute or so to finish melting cheese Cut into 4 pieces Serves: 12 |

Cream Cheese and Avocado Omelet
Ingredients 4 eggs 1/4 cup milk salt to taste dash white pepper 1/8 teaspoon paprika 1 1/2 tablespoons butter 1 avocado, sliced 2 oz. cream cheese Softened chopped chives Preparation Beat eggs, milk, salt, pepper and paprika together. Melt butter in a large skillet over medium heat. Tilt pan to coat all sides evenly. Pour egg mixture into pan, tilt to permit uncooked egg to run to sides and bottom. Stick egg with a fork to let heat through. Lower heat and cook 2 to 3 minutes or until egg is slightly firm through. Spoon or drop cream cheese across the center of eggs. Top with avocado slices and roll the edges of egg over filling. Remove from heat and cover for 2 to 3 minutes or until cheese is melted. Sprinkle with chopped chives. Serve hot. Serves: 2 |

Serves 2: 1 medium sized ripe Haas Avocado 1/4 spanish onion, chopped 2 cloves garlic chopped 3 tsp chopped cilantro lime juice to taste salt to taste optional : chopped tomato (makes the texture a bit wierd though) Cut around the pit to halve the avocado Twist to separate Take the heel edge of a knife and hack it into the pit, then twist again to remove. (You can grow avocado pits quite successfully if you put them into a plastic bag and put them in the closet for about a week or two.) Fork mash the avocado, adding the rest of the ingredients as you go. Taste, season, and serve.

Avocado Ice Cream
4 ripe avocados, peeled and seeded 1 Tbs fresh lime juice 1/4 cup sugar 2 cups whipping cream Blend the avocados, lime juice, and sugar in an electric blender or food processor. Combine the avocado mixture with the cream in a mixing bowl. Place in a shallow container in the freezer until almost set. Scrape into a mixing bowl and beat at low speed with an electric mixer. Return to the freezer until set. Alternately, freeze in an ice cream maker according to the manufacturer's directions. Serves 4 to 6. |
