Work Foods( need ideas)
My buddy and I work night shift at a hospital with no night-time cafeteria service. We either buy dinner coming in or prepare something ahead of time. Once in a while we cook at work...only our cooking time and cooking implements are limited. At our disposal: a George Foreman Grill, a somewhat dated toaster oven, a microwave, and a dorm fridge. There are two other restrictions: it can't be too odiferous, and shellfish makes my buddy anaphylactic.
Now the challenge: We LOVE to eat! Give me some great ideas for stuff to cook. It can be full recipes or just interesing ideas. We've done the chicken breast thing, BBQ pork chops etc. I'm looking for some true ingenuity! And from what I've seen so far, I'm in the right spot. Thanks |

Mr. Cedar is the cook (I do the dishes), but he makes wonderful chicken fajitas on his Foreman grill. You can marinate the chicken beforehand in a mixture of lime juice, tequila, and cilantro, and grill it. Serve on flour tortillas with vegetables (also Foreman-grilled, or sauteed if you prefer). Add salsa, sour cream, guacamole, or whatever else you like. They keep well in the fridge and taste pretty good cold, too.
Good thing Mr. C doesn't come on here, 'cause he'd probably divorce me for giving out the secret to his fajita marinade. ;) |

Fill Pita pockets or flat bread with
1 ham & cheese 2 grilled chicken, grilled veggies (these can even be pre-cooked) 3 mozzarella, fresh tomatoe & basil, a little extra virgin olive oil 4 grilled marinated lamb (beef) Fill the pita or flat bread (the combinations are endless)and stick it under the grill...add any number of seasonings & herbs. |

Grilled eggplant:
Rinse and dry an eggplant. Cut off the cap. Slice the eggplant lengthwise into 1/4 inch thick slices. Spray the foreman grill with pam. Cook eggplant slices 5-7 minutes, flip and cook for 4-7 more. I use eggplant grilled like this on deli meat sandwiches, in pasta sauce, as a side dish, on pita bread with hummus. |
