Just Say No To Chicken Sushi

<center>Chicken Cooking Times</center>

Purchase a meat thermometer. Handytool and it well help you avoid the mess of cutting open the chicken to see if it's done.

Chicken Part = Leg quarters, bone in, 4-8 oz.
Internal Temperature=170° F
Approximate Roasting Time (350°F)=40-50 minutes
Approximate Grilling Time = 10-15 minutes/side

Chicken Part =Thigh, bone in, 5-7 oz.
Internal Temperature= 170° F
Approximate Roasting Time (350°F)=30-40 minutes
Approximate Grilling Time =10-15 minutes/side

Chicken Part = Thigh, boneless, 3 oz.
Internal Temperature=160° F
Approximate Roasting Time (350°F)=20-30 minutes
Approximate Grilling Time = 6-8 minutes/side

Chicken Part =Breast, bone in, 6-8 oz.
Internal Temperature=170° F
Approximate Roasting Time (350°F)=30-40 minutes
Approximate Grilling Time = 10-15 minutes/side

Chicken Part =Breast, boneless, 4 oz.
Internal Temperature=160° F
Approximate Roasting Time (350°F)=20-30 minutes
Approximate Grilling Time = 6-8 minutes/side

Whole chicken,
Internal Temperature=180° F
1 1/2 - 2 1/2 hours on revolving spit
3-5 lb. (broiler) 1 1/4 - 1 1/2 hours (broiler)
6-8 lb. (roaster) 1 1/2 - 2 1/4 hours (roaster)

i heard there was a japanese restaurant in san francisco that serves chicken sashimi, and i thought this link was about that restaurant.

me too. A buddy of mine is a pretty high level chef at a hotel resort thing in Sunpeaks. He wants to go to Japan to learn how to do that right and not kill people... Apparantly you basically have to raise/slaughter the birds yourself and be damned careful.
