Recipe of the Day - July 8 (shrimp and spinach alfredo)
Shrimp and Spinach Alfredo
Ingredients 1 half pint heavy whipping cream 3 Tbs. butter 10 oz. Asiago Cheese (shredded) 1/2 tsp. nutmeg 1/2 lb. of precooked frozen shrimp Large handful of baby spinach 1/2 clove garlic, minced Preparation Place heavy whipping cream in sauce pan and heat until steaming, but do not boil. Add shredded asiago and stir. Add 3 Tbs. butter and stir. Add 1/2 teaspoon nutmeg. Stir. Let simmer for about 5 minutes, stirring occasionally. Make sure all cheese is melted. Add minced garlic. Meanwhile, in a sauce pan with water, heat the shrimp until pink in color Drain. Deshell shrimp. Cut into halves. Add the shrimp to the alfredo sauce and simmer for 5 minutes. Arrange spinach on a bed of pasta (angel hair or linguini) and ladle shrimp sauce over spinach. Serves 4 |
I would need to add mushrooms to that!
