Quick Bread
I love quick bread. Sometimes I just don't have the patience to watch dough rise. Have you ever played around with quick bread? What are your favorite quick bread recipes?
Here's one I'm going to make in a minute: Whole Wheat Maple Pecan Quick Bread 1/3 C milk 1 C plain yogurt 1 egg, lightly beaten 1/2 C maple syrup 1 Tablespoon lemon juice 2C whole wheat flour 2 teaspoons baking soda 1 teaspoon cinnamon 1 teaspoon nutmeg 1/3 C chopped pecans Preheat oven to 375 degrees F. Grease a 5x9" loaf pan. Mix wet ingredients. Mix dry ingredients separately. Mix them together. Pour into loaf pan. Bake 50 minutes, or until a knife inserted in the center comes out clean. |

Snowy, I'll see if I can find some. Applesauce makes baked goods moist and yummy.
So, the loaf worked out great! I should have taken some photos. I added a half cup of flour to the mixture when I had it all together, the dough just didn't look right without it. I also spread 1 tablespoon of butter over the top when it was about halfway finished, which made the crust softer. It rose very well, and the final product didn't come off as sweet. It was an all-around hit with the family. |
Here's one to rattle your chain:
Applesauce Quick Bread Mix: 2 c. unsweetened applesauce 1 c. sugar 1/2 c. cooking oil Mix together and add to applesauce sugar mixture: 2 1/2 c. flour 1/2 t. cinnamon 1/2 t. cloves 2 t. soda 1/4 t. salt Bake in a greased bread pan at 350° F. for about 1 hour. |
