Sauce for the roasted beet ravioli

Ok, I just made the roasted beet ravioli that Daval posted here:

and it was damn tasty. I cheated though, instead of making my own pasta (I usually make my own, but I didn't feel like dragging out the rolling machine) I used won ton skins. For the first time in history, I ended up with an equal amount of filling and won ton skins, I didn't have extra filling or extra won tons. awesome!



ok, for the sauce -

Melt 2 Tbs butter in a pan.

Blend 1 Tbs corn starch, 1 Tbs sugar, and 1/4 tsp salt, and add to melted butter, stirring. Add 2 Tbs lemon juice and a bit over 2/3 cup water, stir and bring to simmer, until it gets thick. (it will thicken as it goes, keep it over low heat if you make it in advance)

Once thick, add 2 Tbs horseradish.

This sauce kicks ass with beets, so I tried it with the ravioli and it works there as well.
