MmmMmm Jambalaya!
Picked up this recipe at a food expo from one of the booths. Made it the other night and it's tasty!
Ingredients: 1 pounds boneless, skinless chicken breasts or thighs, diced 2 tablespoons Cajun seasoning 2 tablespoons canola oil 1 pound Andouille sausage, diced ½ cup onion, chopped ¼ cup green bell pepper, chopped ¼ cup celery, chopped 4 cloves garlic, minced ¼ cup scallions, chopped 2 cups chicken stock 2 teaspoons salt ½ teaspoon freshly ground black pepper ½ teaspoon cayenne, or to taste 1 tablespoon hot sauce 1 cup tomato sauce 1 ½ cups cooked rice Preparation: 1. Sprinkle chicken with Cajun sasoning. 2. Heat oil in a large skillet over medium-high heat. 3. Add seasoned chicken and sauge and sauté for 3 minutes. 4. Remove meat from pat and set aside. 5. Add onion, bell pepper, celery, garlic and scallions to pan and sauté for 10 minutes. 6. Return chicken and sausage mixture to pan with chicken stock, tomato sauce, salt, pepper, cayenne, and hot sauce. 7. Simmer for 30 minutes. 8. Add cooked rice, stir to combine and heat through. |
