Crunchy Parmesan Chicken
This is so easy, and every time I make it everyone loves it & begs for this recipe! You can cut this in half and guess at amounts, which I love.
8 Chicken Breasts/with or without parts 1/2 Cup of Butter or Margarine (if desperate or dieting) 2-4 Cloves Garlic, Awww..go ahead & use the minced in the jar for ease :) 1 Cup Seasoned Bread Crumbs 1/4 Cup Parmesan Cheese (I do like to grate fresh parmy!) 1/4 Teaspoon White Pepper, So I use Black peeper- cuz it's here... 1 and 1/2 Cup Grated Cheddar Cheese Melt butter with the garlic. Mix bread crumbs, cheeses & peeper. Dip your chicks in the butter & coat with bread crumb mixture. Place in a large baking dish. Pour extra bread crumb mixture over your chicken breasts/parts. Bake 45 Minutes at 350 degrees F. Can't miss. Enjoy!! |

PS - I always marinate any chicken I cook...even if it only gets 30 minutes in white wine with some soy sauce in it. Keeps the chicken very moist.
Also - tonight I had several pre-cooked red potatoes from last night I cut up and threw in the mix. They turned out great too. |
i love marinated chicken but i'm also lazy - my trick for super marinating is when i get home from the grocery store... i'll put the chicken into ziplock baggies with some white wine and crushed garlic... then into the freezer for use later... It gets really well marinated when i'm defrosting it :D

If you don't want to soak your chicken in butter you can also dredge it in flour and then in egg white that's been beaten with a little water. That's what I do with my chicken when I make it similarly to that. I also like to use Panko bread crumbs- comes out crunchier in my opnion.

Cool. I've been experimenting with baking breaded chicken, but my techniques need improvement. I'll keep an eye on this thread then :)

I make similar chicken alot but I have never used butter for diping, I will have to give that a try.

This dinner was well received, and a big hit at that. One modification for your review: next time I'm cooking the chicken on a wire grate in the baking dish to get them off the bottom of the dish. Hopefully that will crisp them on all sides and keep it from boiling in melted butter. (oh, but it was good...!)

Glad you enjoyed this chicken dish! The wire rack idea is a good one...I'll try it that way next time, too.

I just use about equal portions of parm and bread crumbs plus a little salt, pepper, and lemon zest. Bake at about 425 till it's done (~12 min or so)

I tried this recipe tonight using the wire rack and it was amazing. It's going to be made on a regular basis around here I think. I served it with some pasta alfredo
