Pork tenderloin with Summer Salsa
 
I'm one of those people who doesnt think that sweet and savory go together - fruit is sweet and should never be mixed with real food - that'd be like putting chocolate pudding on steak... I like my sweet seperate... Salsa is the one exception to the rule - I l ove me some fruit salsa...

Summer Salsa
2 mangos, diced
1 kiwi, peeled and diced
1/2 cup strawberries, stemmed and chopped
1 small can of chopped/diced pineapple w/ juice but save part of the juice for the pork)
1 jalepeno, seeded and finely chopped
1 small handful of cilantro leaves, chopped
juice of one lime

(other fruit you could add would be papaya, watermelon, cantelope or other melon.. use your imagination - I'm also thinking it would be interesting to use mint instead of cilantro... I may have to fruit salsa again...)

I'm sure fresh pineapple would be better, but i'm lazy and never quite learned how to cut a pineapple

Mix all ingredients together and refrigerate over night... the longer the better.


Pork tenderloin
1 -2 pork tenderloins
1/2 cup prepared teriyaki sauce
splash of pineapple juice from the salsa above
1 good squeeze of honey
2 cloves garlic, smashed
juice of one lime

(Pork tenderloins are relatively cheap... so this recipe is easily tripled or more for a crowd)

Put pork, teriyaki sauce, pineapple juice, lime juice and honey into a ziplock bag... let marinate a few hours (or over night)

Remove pork from marinade and toss out marinade
Grill pork until done (usually 5 - 7 minutes per side depending on the size of the tenderloin)


(this salsa is also extremely awesome with grilled chicken or turkey -i'd imagine it'd be plenty good with grilled fish too... )

I more than likely stole it from someone else and just tweaked it a little :) no royalties necessary :)

It's so easy!!! You just cut off the ends, then cut off the skin, and then cut the fruit off the core. Or you can just buy one of those contraptions that does it for you, but I don't see the point when it is so easy.

I am also a fan of the fruit salsa...I really love the mango salsa at Costco, and I'll definitely have to give this recipe a try.

Excellent, just cooked this for dinner tonight. My wife was a little hisitant with the whole putting jalepeno in the fruit, but she was ok with it after trying it. After trying it I think Mint would be good, the cilantro almost tastes a little too "green"

sweet and savoury
 
Some sweet and savoury things can be disgusting, like putting chocolate pudding on a steak. Some things go really well together though, like strawberries and kiwi with spinach.

fruit salsa is healthy and amazing, I once used it with grilled chicken on low carb wraps and it was so good. I added some red wine vinegar to mine instead of pineapple juice...sounds nasty but it actually provided great balance. I also used fresh habaneros which made the shit SUPER hot. Will try your recipe in the next few days, thanks...

I made this tonight.

I didnt use pork, but bbq'd some chicken breast. Took the chicken off the grill and smothered with the salsa, took one bite, and spit it out. Fuckin' gross, this shit was so nasty. I used my fork and brushed off all of the fruit chunks. Eating that way was tolerable.

After dinner I tried the salsa to see if there was anything wrong with it, and it tasted really good, I guess for me it was just never to be mixed with chicken. I have a lot left over (and only used one mango) and maybe try it with some torila chips.

I could easily see this recipe working without having to marinate the pork (or in Ample's case, chicken) at all. I'm a little suspicious about the Teriyaki and Salsa together :eek:
