the barbecue sauce
1 cup mayo 1/2 cup white vinegar 2 tablespoons sugar 1 tablespoon freshly squeezed lemon juice 1 teaspoon prepared horsie sauce 1 teaspoon salt 1 teaspoon black pepper the rub 2 tablespoons chili powder 2 tablespoons paprika 1 tablespoon garlic powder 1 teaspoon salt 1/2 teaspoon cayenne 1/2 teaspoon ground cumin 1/4 teaspoon ground cloves 3 tablespoons extra-virgin olive oil 24 chicken wings in a medium bowl combine all the ingredients for the sauce - cover until ready to use or keep cold in a refrigerator in a small bowl combine the rub ingredients in a large zip-lock bag add chicken wings with the olive oil shake to coat - add liberally the rub mixture and shake like hell to coat - refrigerate for a few hours - no more lay the wings on the pre-greased grill pre-heated to medium-high heat about 18 minutes turning occasionally - delicate little buggers - don't wanna burn them serve them with the sauce in seperate bowls for each victim, celery stalks. beer (of course) 24 wings might serve two or three - play with it you can do the same thing with quartered chickens too, but then you'll need more sauce in a pot to dunk the cooked quarters in before serving oh yeah... paper towels... lots of paper towels!!! |
Sounds good, I have never tried to make my own wings at home, I will have to say no Blue cheese dip? ( I might crumble some in the dip)
