Tequilla Lime Chicken
YAY for being home for a day and being able to cook dinner...
2 chicken fillets 3 -4 limes (put in microwave for a few seconds to get extra juicey) 1 generous splash of tequilla (If you won't drink it don't cook with it-- but the cabo wabo and the premium tequillas stayed in the cabinet - -Cuervo Gold was fine for this) 4 cloves of garlic smashed 1 small jalepeno minced 1 splash of olive oil Juice limes and put all ingredients into a bowl, let marinate for a few hours. Grill Chicken until cooked... (I used a grill pan, I'm not luckly enoug for a real grill) Enjoy.

excellent recipe, similar to my own version. the major difference in mine is that I also add the juice of a mandarin or two to give a sweeter background.

I made this last night, it was great. In fact I have the leftovers sitting in front of me right now...can't wait till lunch time. Too bad I can't have margaritas at work.
