Recipe of the Day - October 2 (rice pancakes)
Favorite Rice Pancakes
Ingredients 3 cups leftover cooked brown rice (or leftover Chinese fried rice) 2 eggs butter or oil for frying Salt to taste Preparation Whip leftover rice and eggs together until well mixed. Heat a heavy iron skillet over medium-high heat. Add butter and allow to melt, tilting pan to coat. Drop batter into skillet by large spoonsful and allow to brown, then flip and brown on other side. Add salt to taste and serve. Helpful Hints You can vary this basic recipe in countless ways. For a fruity sweetness, try adding diced strawberries or whole blueberries to the batter. If you prefer a savory version, add chopped scallions or finely-chopped leftover cooked or grilled vegetables. Grated cheese or chopped nuts are also tasty additions. |

I do the same with bean threads or rice vermicelli. I also add dried shrimp and scallions. Serve with soy sauce on the side with a plate of veggies. For a no oil approach, you can mix the rice or noodles with the egg, place in a dish suitable for steaming, and steam for 20 minutes over medium high heat. Tasty.
