Brisket anyone?
Brisket is a nice, lean cut that has to be slow cooked to get that wonderful tenderness and deep flavor. Here are a couple of good recipes.
Place brisket on foil in a rectangular pan so that the brisket can be wrapped with the foil. Cover generously with celery salt, onion salt, pepper, garlic salt and one TBSP of liquid smoke. Seal and marinate overnight. Open up the next day and repeat the celery salt, onion salt, garlic salt and pepper. Also add 2 tablespoons of Worcestershire Sauce. Reseal in foil and bake 1 hour per pound at 275 degrees. When finished, open the foil and pour on a spicy barbeque sauce of your choice. Cook with foil open for 45 minutes at 375 degrees. Or you can use a slow cooker or crock pot. Crock-Pot Barbecue Brisket 5 1/2 pounds beef brisket 1 3/4 cup barbecue sauce 2 tablespoons brown sugar 2 teaspoon Worcestershire sauce 2 teaspoon black pepper 1 teaspoons garlic salt 1 teaspoon seasoned salt 1/2 teaspoon onion powder 1/2 teaspoon dry mustard Combine all ingredients, coating the brisket well. Marinate overnight. Cook in crock-pot on low for 9 to 10 hours. Slice into thin strips, across the grain and serve on rolls or buns. Another good marinade is is Italian dressing over night then slow cooking. Last edited by redravin40; 09-05-2003 at 06:06 AM.. |
