Go to a good organic supermarket (they're popping up all over the states so there should be one in your area) and pick up some of their frozen vegetables.

Make sure the package says "flash frozen". If vegetables and fruit aren't frozen in this manner (extremely quickly) than they get mushy when thawed.

I think you'll find these types of frozen vegetables (organic, flash frozen) are far superior to anything canned.
