I keep it very simple:
Two Large cans of Whole Italian Plum Tomatoes
One/Two Cloves of Minced Fresh Garlic
Fresh Ground Pepper
Salt to taste
Hand Full of Fresh Basil (1/2 Cup, Loose Pack)
Table spoon or two of chopped fresh flat parsley
Heat olive oil in pan and mash the garlic in until pulverized...do not brown...Break the tomatoes up by hand and then add to the garlic & oil...Add salt & Pepper and half the herbs...Bring to boiling temperature...Your Done!
Do not overcook, acid & seeds in tomatoes can make the sause bitter.
Add Extra Virgin after you are done heating (as heating extra virgin makes the oil unvirgin)
Add the rest of your herbs and check for salt & Pepper just before serving.
This sause is good on it's own or add onion, oregano, any meat, veggies, heavy cream, etc.
