Oh, the jerky out of this doe is amazing. A-may-zing. So tasty.
I'd recommend finding a jerky recipe that works with ground venison. It's much easier to just make some lean ground to use for jerky than it is to cut strips out of some of the more difficult-to-trim meat. It's also easier to mix spices in with ground.
