I just saw Spungfoo mention Arch Enemy. What a great band... I honestly think that they may be the best thing going in true metal right about now.

Slayer (God Hates Us All proved that they have all the intensity they ever did and then some)

Hatebreed (this might seem an out-of-place addition but I have always considered them to be metal)

......good God, there are so many more to name... it would take me way too long to really get into it so I think I'll just leave it at what's there now.
