I'm not sure if this helps you, but I just saw a similar question on iPodlounge:
Quote:
Q: How do I name tracks that I imported from CDs when not connected to the Internet? Do I have to erase them from the computer and add them while connected?
- Don
A: If you import tracks from CDs in iTunes, you can use the Advanced > Get CD Track Names command to connect to the CDDB and get the track info. However, if you used other software to convert the songs to digital music files, iTunes won’t be able to check with the CDDB to get this information.

So, you should be able to rip with iTunes directly, and get the track names later. I'd recommend ripping 2 discs while offline, then connect to the internet and see if you can get the titles for both of them at the same time. Then, go ahead with the massive ripping project.
Don't forget to go back and make sure the tags work for you; for instance, I always change the Genre to work with my own classification system.
