Rice. I'll cook a pot of short grain, brown rice every few days. Leave it in the fridge, then in the morning, drop a large spoonful or two in a bowl in the microwave and heat til warm, pour on some maple syrup -- or sprinkle with brown sugar and butter.

There's also the old standbys - toasted baged with peanut butter, or cream cheese. Quick bread recipes are readily available that you can make every few days and have fresh baked goodies for munching.


If you cook rice with twice as much water as you normally would (almost soupy) and add oil and salt to it, it's very good.
