Ahh, a fellow Irishman. Well my friend, I've been experimenting for years and made a million different things, but the old diced with peppers and onions and then pan fried is always a great standby(Potatoes O'Brien). A great way to make them tastier is by adding a few tablespoons of Red Wine or White Vinegar to the pan while frying. Adding Bleu cheese to a batch of mashed is great as well. Another easy one is to cut baking potatoes in half lengthwise, cut criss cross slits in them, season with pepper and Lawry's seasoned salt after applying melted butter, and then baking them face up in the oven. These are great with steaks, and fairly easy to make. Looking fwd to hearing more people's suggestions, Slainte!
