Food What's For Dinner Tonight?

    I'm going to make a sweet potato and some sautéed kale with mushrooms and tomatoes. This is a landmark meal for me, because I've never liked sweet potatoes. Ever. While the hubs was here he showed me how to make them two ways that I actually quasi-enjoyed. I can't WAIT to go to Whole Foods this weekend. I need some chicken titties like nobody's business.

    The first is actually really simple... nuked and mashed with sea salt, pepper, and a tiny pat of butter. I don't like butter really, so it was less than 1/4" thick. It's the sea salt and pepper that masked the sweet taste for me.

    The second was a bake with chicken, thyme, onion, sea salt, pepper, and maple syrup... which I also don't like, so it cracked me up. I put tiny drops of Bragg's on the last part and it was great. I'll see if I can find the recipe.

    I was too tired for the kale and I had chicken sausage, white bean, and kale soup for lunch, so I didn't worry about it too much. I just made the first way.

    Last night we had lamb roast slow cooked in the crock pot, brussel sprouts, & carrots. My wife did an onion sauce, which is basically cream/milk gravy with parboiled onions, and it was delicious.

    Today brunch was ham, cheese, & onion quesadillas. We used the quesadilla maker that we 'inherited' from her parents, and it actually works pretty well.

    Tonight's dinner will be leftovers. We need to make room in the fridge, and I hate throwing out food that we should've ate before it spoiled. My wife isn't a fan of LOs, unless she takes them for her lunch, but sometimes we have to bite the bullet.

    I cooked up some black beans yesterday, so I'm thinking chili in the slow cooker for dinner tonight. I'm also going to make some cornbread to go with it.

    Planning on making some fluffy hoagie rolls and filling them with white bean and spinach balls with marinara, all from scratch.

    I cooked chicken satay skewers, but lefy out the sticks and cooked the chicken on the bbq. Served with soba noodles and steamed snow peas. Pretty tasty and the boys gobbled it down :)

    I think I'm going to shovel the 6-7" of snow we just got (and are still getting) out of the way to grill some steaks.

    We have a spiral sliced ham that I meant to cook a few days ago, but some things came up, really need to get it cooked (throwing away food that should've been eaten before it spoiled seriously gripes me). I'll pass on my preferred use of pineapple rings, cherries, etc., but I plan to baste with its juices every half-hour or so, & will do the glaze at the end.

    It'll also make a nice munchie for the SB tomorrow. Some chibata rolls would be great.

    I made a Cincinnati style 3-way tonight. Eden wants nothing to do with it---here in the South, you put chili on your burgers, not your spaghetti. I was craving some comfort food from home, though, and it smells delicious.

    I believe that's chili, spaghetti, and cheese. Technically, I guess mine was 4-way, since I had beans in the chili.

    Whatever you call it, the end result was a very near culinary orgasm.
