    I LOVE me some tacos.

I am marinating the chicken thighs. Used an olive mayo base, threw in some chili powder, cayenne, and salt. I'll let them sit in there for a while, then roll them in bread crumbs and black pepper and throw them on the BGE.

Veggie fajitas. Onion, zucchini, peppers, and 'shrooms. Delicious, quick, and easy.

There is a mildly amusing story to go with my dinner choice tonight. My wife and I often talk or email during the day about what we'll do for dinner. Most days that I work from home, I grill out so she doesn't have to cook. On days I travel or am very busy, she cooks. On her days she will usually ask me what I want, or give me a choice between a few ideas she has in mind. One day she said she'd make me whatever I wanted. It was already almost dinner time and as a joke, since it was the first thing that came into my mind that would be a pain to fix at the last minute, I said "Beef Wellington". So we've had a running joke the last few weeks, every time she asks I say "Beef Wellington". I honestly don't recall if I've ever in my life even had it.

So today I asked her if she wanted me to grill or what we were going to do. She said dinner was going to be a surprise.

    It's Beef Wellington.

We always say, "Food...of the foodular variety." We're totally unhelpful to each other.

I have been through stretches where "tacos" is my answer so often that she'll say "What do you want for dinner aside from tacos?" :p

  7. I haven't had a good beef Wellington in years. Not something you see on menus all that often.

    A wheat wrap.
With a few slices of Hot Calabrese
    some melted mixed cheese
and a touch of sour cream atop.

And a nice screwdriver with Absolut Citron

Not the healthiest meal but very tasty.
Sometimes I just like to mix tastes and bring it together.
Only took 3 minutes to make.

I often make potatoes like that on the grill. They are awesome. You can get creative with the seasoning and what you drop in there too.

Ribeyes, corn on the cob, some sliced potatoes in the foil packet for the Mrs, and a baked potato down hidden in the coals for me.

I'm keeping it simple. olive oil. sea salt. cracked pepper. Haven't tried them, yet, but they look pretty good!

They were pretty good, but still just potatoes. It was easier to slice them than I thought it would be. But, honestly, I'm just not a big fan of white potatoes.
I might like to try again with sweet potatoes.
