Food What's For Dinner Tonight?

    had beef top sirloin cut into strips (like fajita size) and sauteed with onions, ginger, tomatoe until tender and with a nice brown sauce. Dished over brown & white mixed basmati rice and steamed broc & cauliflower.

    Tonight's dinner was

    FISH AND AVOCADO CEVICHE (s/s 8-'11)

    Prep 40 minutes, Chill 6 hours, Makes 6 servings

    Choose Red Snapper, Sea Bass or Flounder
    1 1/2 pounds of skinless fish fillets cut into 3/4" cubes
    3/4 cup each, fresh Lemon juice and Lime juice
    1/2 red Onion fine diced
    2 Green Onions (scallions) white and tender green parts minced
    1/2 cup Red Bell pepper seeded and diced (1 small one)
    1/2 cup Yellow pepper seeded and diced (1 small one)
    1 Jalapeno seeded and minced
    3 Plum Tomatos diced
    1 TBS Capers rinsed
    1/4 cup Green olives finely chopped
    2 TBS Flat Leaf Parsley chopped
    Dash of Hot Sauce
    2 TSP EVOO
    1/2 TSP Salt (check carefully Capers are salty)
    2 Avocados pitted peeled and cubed.

    Put cubed fish in a non reactive bowl, pour the Lemon/Lime juice over it
    mix well and cover, put in refer for 6 hours..mix occasionally.
    Meanwhile, combine the red and green onions, Bell peppers, Jalapeno, Tomato
    Capers Olives, Parsley, hot sauce, EVOO, Salt and Pepper (to taste) in a
    bowl , stir well, Cover and refrigerate for 6 hours.
    Just before serving, drain the fish, discard the liquid, transfer to a large bowl, add
    the pepper mixture and Avocado, mix well, taste adjust seasoning...
    SERVE with Tortilla chips
    For a party double this recipe and serve in glasses.....

    We also went to a local wine bar and had a great bottle of Bella Glos Pinot Noir.

    Tonight is a cookout at some friends' house. :)

    Not sure about tonight but I just pulled a pork shoulder out of the freezer for tomorrow.
    That's going to be some serious Labor Day good eats.

    Last night we did grilled pizzas. I've been using a higher hydration dough lately, but I discovered that doesn't work so well for the grill.

    I don't know what we'll do for dinner tonight. We'll probably be too busy processing pickles to eat.

    I've decided I'm going to make a Roasted Red Pepper Cream Sauce (recipe found here) tonight. It's going to be served over tortellini, onions, sun-dried tomatoes and spinach. I hope it turns out well.

  11. Had a Pepper Jack burger from here: http://blacklotusbrewery.com/ along with 2 pints of:
    People Mover Pilsner 4.4%ABV Classic German style Pilsner brewed with noble hops and German malts. Cold aging gives this beer a clean, crisp refreshing finish.
    I was driving, so I chose the low ABV. QW, however, really enjoyed some Wildberry Pyment... 14%!


    A ‘Pyment’ (pie-ment) is a mead made with grapes. This one is made with clover honey, shiraz grape juice, and natural wildberry concentrate. It is full bodied and semi-sweet. Looks and tastes like Kool-Aid for grown-ups. Dangerous stuff, indeed.

    had such an awesome seafood buffet after the golf tournament yesterday and such a delicioso bacon swiss burger before golf today, i think i'm skipping supper tonight...

    That pork shoulder did a slow cook in the oven for 6 hours. Couldn't work outside because it rained most of the afternoon.
    Finished with a peach reduction sauce.
    Pretty fantastic if I may say so.

    Tonight, I decided to have a treat .. Indian carry Out. Chicken Tikka Biriani .... includes a vegetable curry, and a prawn puri. It has that hot and sour pathia sauce, and soaks into the puri beautifully. Howevar ... the prawns :eek: and :confused:, They were hard and stringy ... and had a kind of 'hotness' to them which had nothing to do with the sauce. More like mild battery acid or ... or ... detergent. Yes. Maaaan. The sauce was great, but I had to pick out those prawns.

    Flank steak on the grill is the main course, not sure about sides yet.
