    I've got kale that needs to be used up, and so it will likely be something with potatoes and kale. I'm thinking something like twice-baked potatoes where the inner potato has been mixed with kale.

    Tonight i have convinced my most loving husband to take a whack at it in the kitchen. So, i sent him a plain and simple lasagne recipe to follow :) so it's going to be lasagne and a greens salad... I cannot wait!

    At Mrs. Levite's request, we had breakfast for dinner: scrambled eggs, cinnamon waffles with Icelandic butter and Vermont maple syrup, soy bacon/sausage, Cara Cara oranges.

    Oven-roasted portobello burgers marinated in garlic, red wine, liquid aminos and a bunch of other yumminess... On organic whole wheat rolls, topped with avocado, tomato, and vegannaise. Sides of steamed broccoli, leftover sukuma wiki and palak. Freaking amazing. I love eating healthy.

    You know the recipe for Baked Walnut and Cheddar Balls with Sauce Bechamel, from The Vegetarian Epicure? If you make that, and form the whole thing into a loaf instead of making balls, you can substitute very nicely for meatloaf, I think.

    For those who don't have that, the recipe is:

    1 1/2 c. ground walnuts
    4 oz finely grated sharp white cheddar
    1/2 c. breadcrumbs
    1/2 c. wheat germ
    1/2 onion, minced
    3/4 c. whole milk
    2 eggs
    2 T. parsley
    fresh ground pepper
    salt
    3 c. Sauce Béchamel

    In a large bowl mix walnuts, finely grated cheese, breadcrumbs, wheat germ, onion and milk. Season the mixture with chopped parsley, pepper, and some salt. Finally, add the well-beaten eggs.

    Roll the mixture into balls, slightly smaller than eggs in size, and arrange them in a well-buttered baking dish. Make 3 c. of Sauce Béchamel, well seasoned with thyme and onions, and pour it over the walnut balls in baking dish. Bake at 375-400 degrees for about 35-40 mins. Serve very hot from baking dish.
