Food What's For Dinner Tonight?

    I cut my tofu into thin rectangles, dried it out in the microwave, lightly fried it in some olive oil, then added half a packet of taco seasoning along with about a quarter cup of water. I cooked it, turning the tofu, until it was well covered in the taco seasoning. It turned out pretty well.

    Ah... I got mine super-firm and cubed. I have some Emeril's taco seasoning that S mixed up the last time we did something mexican-y... I forget what. I'll give that a shot. I love the crispy/slightly tough outside that nearly turns into a skin when you press it out and just put soy sauce on it for 5 minutes, then fry in a non stick pan with a little sesame oil. I'll have to try it with the water and taco seasoning. Thanks!

  5. Unbelievable seafood dinner at the Island Room in Cedar Key FL. Clams, oysters, incredible crab bisque. That was appetizers! All raised locally right here in the Gulf. Main course was a seafood boil. Phenomenal meal. Best seafood I've ever had.

  7. No! :D Staying at our clients condo on the Gulf. Actually have been working my butt off, a very good place to do that however.

    I used the cast iron skillet to roast Georgia sweet corn, diced poblano, cubanelle, and wiri wiri peppers with some sliced onion. Then used the non-stick to do some tofu with Emeril's taco seasoning (thanks snowy !). Made a bed of baby greens with cucumber sticks, matchstick carrots, diced tomatoes and then tossed the roasted veggies, cilantro, tofu, avocado cubes over top and piled on some fresh salsa. The result is awesome. The Dogfish Head Positive Contact is a little odd, but drinkable.

    Fresh venison backstrap, grilled with a glaze of butter/brown sugar/soy.
    Accompanied by kasha (buckwheat) and steamed broccoli.

    Random leftovers. Part of a porterhouse (basically all the meat along the bone for 3/4" or so), some rice/beans/veggies, some homemade mac n cheese, and part of a quasadilla. We'll just split it all up and each have a few bites of each dish.

    Some days leftovers are awesome.

    Venison loin.

    Wow was it good. I'm sorry if you've had venison and don't like it. But if you'd have grass fed beef and liked it, I'm guessing you'd like corn fed deer the way I prepare it. I don't think most people would even detect much of a difference. Good stuff.

    Borla: venison is always delicious--I can't say I've ever had bad venison. I love, love, love venison jerky.

    I've had some people say they've hated venison. I've never had anyone try MY venison and hate it. I've found that most people who complain that it has a 'gamey' flavor overcook it. Venison is best just a shade rarer than beef. If you cook it past medium it intensifies any gamey flavor.

    I like gamey flavor. I'm weird like that. A regular dark meat fanatic. I hope I get the leg on Thursday!
