Food What's For Dinner Tonight?

    I had the Cooper's Hawk Farm Grill. It was good, but not great. It was the second time I've been to that restaurant and felt the same way. For the price, it should be better IMO. I'm thinking that any other trips there will only be if we are with a group that requests going there, though I'll still continue to stop in for wine tastings and the like.

    Tonight is brats on the grill. I picked them up at the farmer's market from a farm less than 5-6 miles from my house. They were grilling free samples when I was at the market and everything was awesome. I already ate the breakfast sausage I bought from them and it was some of the best I've had in a long time, and it was relatively lean. Not sure on sides with the brats yet, probably a salad and something else on the grill.

    Yesterday, since I was home from work but semi-mobile, I made fajita bowls for lunch and then used the leftover rice, peppers, and onions to make fried rice for dinner. Now I've got to figure out what to do with the black beans that are left over.

    I don't know what's for dinner tonight. My husband will be cooking. I have to go volunteer for a couple hours.

    Pulled Pork from a pork roast in the slow cooker...this is so simple...2 large onions, pork roast, bbq sauce and a bottle of ginger ale.
    Cut onions in 3/8" slices, put one in the cooker ( I always use a liner to make cleanup easy) put the roast (about 2 1/2 pounds) in, then the other sliced onion over the roast, pour the ginger ale over...cook low for 6 hours....remove meat and onions, shread the meat with 2 forks, pour off the liquid, put the onion and shreaded meat back in the cooker, pour about a 1/3 of the bottle of sauce over it, cook for another 3 hours...done...

    With the PULLED PORK it's
    COLESLAW (NO MAYO)

    1 small green Cabbage, sliced thin
    6 Scallions, sliced thin
    3 Carrots, grated....mix together

    In a bowl mix 1 cup of Sour cream, 3 TBS Red wine vinegar, 2 TSP Caraway seeds,
    Put all the first 3 items in a large bowl, along with 1 cup raisins (I like golden for the color),
    pour the mixed liquid over the cabbage mixture add some Kosher salt and pepper to taste,
    mix well, refrigerate for a few hours to meld..... WHY BUY COLESLAW this is so easy, no chemicals...

    We are having what I call Uncle Tom's eggs. Combine whatever vegetables you have that go well with eggs, saute them, then scramble with eggs and cheese. Tonight, we're doing peppers, mushrooms, and spinach.

    Poor S has a massive ear infection and coudln't chew anything, so he had two sweet potatoes that I baked for him.
    I had a repulsive Florida avocado with onion and spices spread on toast with two slices of grilled tomato. It was awful.

    Tonight was an 'I don't really feel like eating but I suppose I should' night.
    Bread, butter, potato chips and tomato juice. But I did have a great time chatting with my friend on the phone while I was eating it. She has a new kitteh, and it is likely to get along OK with the dog. THAT's what I want to remember from this meal!!

    Bar food. I buddy/customer of mine and I went boating on the Mississippi tonight and stopped at a dive bar on shore. Had one of the best pork tenderloins I've ever eaten in my life, and I don't say that lightly.

    Found this recipe....
    SHRIMP FRIED RICE 2 Servings
    1 cup Water
    1/2 cup uncooked Brown Rice
    2 TSP EVOO
    2 oz Onion diced
    1 clove Garlic diced
    12 Shrimp
    4 oz Mixed frozen Veg
    1 Egg
    2 TSP Hoisin sauce (you do have this in the fridge, right?)
    If you have any cooked chicken left from another dish...you can add this toward the end just to heat it

    Heat water in a sauce pan till boiling, add rice cover reduce heat to low allow to cook for 40 min
    When rice has cooked 25 min. heat oil in a large skillet med. heat add onion and garlic stirring 2 min.
    Add Shrimp, cook 5 min. stir often
    Add Veg cook 2 min to heat Veg thoroughly stir often
    Beat Egg with Hoisin pour into skillet with all above, cook and stir till egg is cooked
    Add rice to skillet mix completely until all moisture has been absorbed....

    I'll comment on this after dinner...it's a new recipe to me

    It turned out excellent, just neded a bit of salt and pepper, I used a whole package of BIRDS EYE Steamfresh Fresh Frozen Vegetables (I didn't use the Citrus Sauce)
    ( how can frozen vegetables be fresh?)

    Quite possibly the most disgusting frozen dinner ever
    Consistency of baby shit, barely formed patties that were mushy and pasty at the same time.
    Smelled yummy, but was so horrifying that I threw it away before I could throw it up.
    I had a 100-calorie bag of Redenbacher's natural lime and salt popcorn. And a cup of sweetened, vanilla almond milk.
    And a whiskey glass of Cigar City Jai Alai beer.
