    Tummy is very happy.

    I made...
    Yesterday - sauteed Tilapias with a touch of pepper atop of bed of Spring Mix/Spinach with a light vinegarette dressing.
    Served with a Lemonade

    Today - Pan-seared pork chops with a light favored salt and sauteed mushrooms, mashed potatoes with gravy
    and a salad with shredded cheese, raw mushrooms & sweet tart dressing
    Served with Sam Adams summer ale

    Potato, leek, and bacon soup. Maybe a tad early in the midwest, espescially as fierce as the summer has been, but this stuff makes me ready for fall. We may just live on this stuff during the fall/winter.

    Due to my elder son's allergies, there's no dairy in it at all--contrary to what one may expect. Diced, crisped, and reserved 1 1/2 lb bacon (I'm using even more next time!). Added 2 qt chicken broth directly into the bacon fat; don't dare dicard all that happiness. Boiled 8 oz by weight sliced leeks and somewhere around 3 lb (not measured) cubed russets until everything was just past fork tender, then pureed it all with the immersion blender. The bacon fat made the potato creamy and sexy. Kosher salt to taste and around 3/4 C of our preferred butter sub (Earth Balance spread) at the last minute. Rich, hearty, easy.

    I made whole-wheat spaghetti with green beans and a salsa cruda composed of heirloom tomatoes, roasted sweet pepper, garlic, and basil. Easy and delicious. I threw some fresh green beans from our garden in with the pasta near the end of the boil. They were still a bit crunchy--perfect.

    Also picked up three pints of Haagan Dazs ice cream for consumption over the Eid holidays.

    She absolutely killed it.
    I should be asleep on the couch with my contented full tummy in no time.
