Grilled Tofurkey sausage on a bun (with sauerkraut, of course) and a side of grilled eggplant.

Mine was corned beef, saurkraut, light mayo, and provolone on rye.
His was maple ham, spinach, tomato, mayo, havarti with jalapenos, and bread-and-butter pickles on rye.

Leftovers. We have one filet and a couple pieces of grilled chicken to split, along with some grilled veggies.

Veggies and a baked potato, followed by applesauce for dessert.

Hope you cook the onions very well. Their texture usually ruins the dish for me.

I'm a bit of a burger junkie. I've never had In N Out. Half the people I talk to say I'm missing out, the other half say it's overrated. I'd like to be able to decide for myself.

Tonight is probably carryout or something quick, we are planning on listening to some live music at our local wine bar (which doesn't serve food but encourages you to bring/order stuff in).

    Chicken Tortilla Soup-

Crock Pot Style- Cook on low for 4-5 hours

1 pound frozen chicken (shred near end of cooking time) ........I usually use 2 or 3 big slices of cut chicken breast, whatever you think is enough
1 (15 ounce) can whole peeled tomatoes, mashed -------
1 (10 ounce) can enchilada sauce
    1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers
    2 cloves garlic, minced
3(14.5 ounce) cans chicken broth ...I use 2 --3 cups of chicken stock
    1 teaspoon cumin
    1 teaspoon salt
    1/4 teaspoon black pepper
1 (10 ounce) package frozen corn
    1 can black beans, rinsed

During the last hour of cooking I add some flour if I'm wanting to thicken it up a bit.

Garnish with tortilla chips and a dollop of sour cream and you're good to go! :)
