Finally back to cooking regular meals. Tonight is char-grilled tuna steaks served with a heaping helping of beans (romano and cannelini). It's been a fish filled week, but there's a local fine food store that has a nice selection of fresh fish, and I wanted to give them a try.

Sauteed an onion and a zucchini together, added some cooked rice and black beans along with some El Pato enchilada sauce, then turned down the heat and let it cook through. Yummy.

A local grocery (Hy-Vee, an Iowa based chain) has a dynamite salad bar. Take out is $5.99/lb and it has the usual greens, mushrooms, fava beans, broccoli, peppers, cauliflower, blue cheese, parmesan, berries, pineaple and usually a selection of ham, roast beef, and chicken. I've never seen their salad bar not be fresh and appealing.
I made a veggie one for tonight, and one with chicken and beef for lunch tomorrow. Total cost, about $8.00

Do they have Hy-Vee in Boston, or are you in Iowa right now? If so, where?

I'm sorry, I'm not in Boston anymore. I'm in Lincoln, Nebraska. I just never seem to get around to changing my profile. I guess I could do that right now.:)

Ahhhhh, makes more sense now. I was just asking because I'm in IA almost weekly for my work travels and am familiar with Hy-Vees.

Hy-Vee seems to do so many things right. Much better than the chains back East. They aren't the cheapest, but any time I go to a grocery instead of a restaurant, I'm saving money.

I was looking forward to salmon wrapped in phyllo, mashed potatoes and steamed veggies. My dog just polished off most of the potatoes. Moral quandry: Do I serve the remains to unsuspecting family?

This is one of those times when instant mashed potatoes would probably do just fine.:)

I bought nori a couple weeks ago and managed to make avocado rolls once before my cat decided she liked nori too. She managed to pull the package down out of the cupboard (it was in the one cupboard with no door) and rip it open. There were about three half-eaten sheets of nori scattered across the kitchen when I woke up. I was so pissed.

    Yesterday, I pan seared
thick boneless pork chops (great deal, 1.99/lb)
Whipped up a bit of fettucini alfredo to go with it and some string green beans.

    Tonight, I'm cooking Rumaki
and mashed yams & brown sugar on the side.
