    I got some breadcrumbs at the store so I could try this out. I've never made it and I'm looking forward to trying it.

    I have a feeling I'll be having cereal for dinner tonight. Hubby and son are going to a haunted house shortly and I'm off the hook for cooking tonight.

    We had an early dinner tonight and "rediscovered" a sushi place that has awesome happy hour specials. Most rolls that are usually $8.50-15.50 each are $3.50-$5.50. Yay for enough sushi to stuff two people, with an iced tea each, for under $40 (pretip).

    My husband assembled a pretty simple enchilada bake: layer tortilla, black beans, cheese, enchilada sauce, repeat, repeat, top last layer with tortilla, sauce, and cheese. Bake at 400 until bubbly. Serve with sour cream and sliced black olives.
