    Nope. I meant to post it earlier. I'm lusting over your pizza, dude. Full gluten detox... I've been cheating lately and was feeling crappy. I want pizza sooooo bad.

    Man, I need to go with hubs to his next ORD trip. January won't happen but maybe February. The foodz up that way look ridonkulous. And I suspect I can find some gluten-free pizza worth knocking a few heads around for.

    I've had great pizza and terrible pizza at local non-chain places and smaller regional chains. When I was hitting the road a lot there was a small chain called Monical's with locations in mostly mid-size towns in Illinois and Indiana. I loved their pizza!

    There's a regional chain out of Lincoln called Valentino's that the locals love... but I don't really care for it. Not awful, but nothing special, either.

    One chain that flies under most radar is pizza from the Casey's General Store chain. They're a midwest convenience store chain out of Ankeny, IA. A very well-run operation. Most of their stores feature scratch-made pizza. I like their pizza a lot, but it can, depending on topping, be kind of greasy/oily. But I like it.

    Full disclosure: I own a fair amount of stock in the company. NYSE:CASY and it's been a very good investment.:) And thanks for the invite.:)

    As an 80/20 low-carber I make pizza low or no gluten by scraping all the toppings and sauce off, eating that, and letting the crust dry and feeding it to the squirrels, which don't seem to have any gluten issues.:rolleyes:

    Sometimes I eat stripped pizza with some (non gluten) Fritos, for the texture. Don't laugh if you haven't tried it.:D The pizza in @borla's post looks like it would make a great pizza el-frito.

    I grew up in a town with a Monical's! On rare occasion during my travels I'll stop in and get pizza at one for old time's sake. I love their thin cracker crust. :)

    Sautéed calamari with tomatoes, olives, broth, and basil pesto oil for an app. Perfect burger and shoestring fries. And wine. And coffee with frangelico. And bananas foster GF macarons. Fuck yes. Totally makes up for this week.

    My girlfriend has turned me on to that. When we go to Iowa to visit her mom we get Casey's breakfast pizza. There is one place in the mountains that merged with them and now carries their pizza. I found them the last couple months of being a trooper.

    A few days ago I bought a ham bone from The Honey Ham Store, thinking to make pea soup for dinner.
    Little did I realise that the bone was frozen.....dumb ass....so today I finally made the soup.
    4 carrots chopped up
    3 stalks of celery chopped up
    1 onion chopped up.....
    2 cloves of garlic chopped up (everything needs a bit of garlic)
    saute till they are soft in a lump of butter and some EVOO
    1 container of beef base (32 oz plus on of water)
    the entire ham bone (less the bits I snacked on)
    Bring to a boil, then simmer for about 3 hours while we take Mr Barkley to the dog park
    Taste for salt etc (none needed) take the bone out and chop up the meat that is still remaining, dump it back in.
    Use the immersion blender to chop it up and I have 6 containers of the best ever pea soup in the freezer...minus one for tonight
    Easiest recipe ever....unfortunately the ham bones have gotten a bit expensive......$8 for the damn bone...

    Pea soup with no peas? FWIW Kroger has their spiral cut hams on sale for .99 a pound. I paid about $9.00 for a nine pound ham. Which leads to...


    Last night we had baked spiral cut ham, baked spaghetti squash, and steamed carrots.

    On another note,
    Tonight it's Chicken Tikka Masala from COSTCO....it's really pretty good....
    I made some rice, and instead of using water I used some of the chicken soup that I had in containers in the freezer.....how come I never thought to use this before....it's very good...

    I sautéed grassfed beef, garlic, leeks, onion, mushrooms, and shredded carrots until slightly under done. Baked three poblano peppers at 350*F open end down for 20m. Let them cool, and stuffed with the beef and veg, sliced spinach, and shredded Applewood smoked cheddar, topped with a little more cheddar and baked at 400 for 10m more. Steamed some rice, took half and seasoned with the same mix ad the beef and veg (pink sea salt, cracked pepper, chili powder, garlic powder, cumin, coriander, oregano, and a tiny bit of Ceylon cinnamon) and the crumbs left in the sautée pan.
    'twas good.
    Hubs will reheat the other tone tomorrow, probably. I usually tell him to chop it, reheat in a pan, and crack an egg over top.
