Food What's For Dinner Tonight?

    We're trying a couple of new things. Daily Chef (Sam's Club brand) Chicken-Spinach-Asiago sausage for dinner, with black beans.

    Kerrygold Ballyshannon white cheddar cheese, from Ireland. My wife couldn't wait to try it; it's really intense & sharp (and delicious!).

    The sausage tastes great, but it's going to be a every-once-in-a-while treat. It's a bit expensive for our budget, also very high in fat (most likely made from 'throw away' chicken parts) and sodium.

    Last night we had Alton Brown's stovetop mac and cheese. We made it with orzo so I wouldn't have to chew so much.

    We've done a few similar sausages to that. Not Sam's brand, but I'm sure fairly comparable. They are good, but like you said, a bit high priced for what they are.

    There is a small meat market located in the Quad Cities (IL/IA border) that makes their own sausages and brats in over 50 flavors. Cheaper, and pretty awesome. Some of the flavors are a bit out of my tastes (gummy bear brats?), but some of them (beer and onion brats, chili cheese dog brats, tomato basil sausage) are pretty tasty.

    If you get far enough away from Houston proper, there are quite a few small meat markets that do their own sausage. During, & for a while after, you can get some nice venison/pork sausage. How 'fatty' it is depends on how lean you like it (one of our neighbors has his processed with very little pork). The good news is the sodium content tends to be much lower than commercial sausage. The bad news is the prices are what you'd expect from small shop.

    The location plays a role. I'm mostly familiar with the area west/northwest of Houston. In Shiner, TX (home of Spoetzl Brewery, well-known for their beers, with Shiner Bock being the main one) the meat markets play to tourists. Around Sealy (away from I-10) and Bellville it's mostly locals.

    Broiled hamburger patties (seasoned with Italian herbs, garlic, & Worcestershire sauce) topped with cheese*, leftover oven-roasted potatoes, & carrots.

    * White cheddar cheese is NOT a good choice to melt onto burgers patties under the broiler, it loses most of its flavor.

    Baked chicken thighs, steamed broccoli, roasted sweet potato. I love vacation, but my belly is tired of it.

    Moqueca de Peixe Bejana (Brazilian fish stew) at The Grill from Ipanema -- sea bass and shrimp in a blend of palm oil, coconut milk, with fresh cilantro, tomato, onions, green pepper and served with rice, yuca puree and Brazilian cheese bread.

    Last night we made a 'thrown together' eggplant Parmesan. The eggplant turned out to be a little too small for a full double layer, and we had to use jarred sauce because we didn't have any Chris Noyb's Awesome Homemade Meat Sauce . It turned out well.
