Food What's For Dinner Tonight?

    Staying in tonight. The Moms are coming. I'm probably going to make pesto with the fava greens I have. What I do with it is the next question.

    That dinner was pretty epic.


    I'll post more details later, but suffice it to say it did not disappoint. In the top handful of meals I've ever eaten.

    Made sofritas like the ones from Chipotle for a party tonight. I also put together a bunch of fajita vegetables that we're going to grill on skewers.

    They were out of GF crust :( half a salad and a meatball. And drinks.

    Making Beer Battered Oven Fried Fish for dinner again. Mostly because I'm tired and it's simple to make. Again recipe is here if interested. I just substitute the cooking spray for melted butter.

    It's delicious. Not you traditional beer battered fish. Still my new favorite way to make fish. I think it'll become a staple in our house.

    I just finished making this potato salad. I wanted it to chill in the fridge for a bit before dinner. It'll be served with corn on the cob and veggie burgers.

    Stuffed poblano pepper at my favorite Mexican restaurant...stuffed with rice, oaxacan cheese, apples and cranberries, topped with smoked tomato sauce w/ wilted arugula, onions and mushrooms.

    rumchata flan for dessert

    I'm making this spaghetti sauce to basically use up some read wine we still have in the kitchen. I'm also using ground turkey instead of ground beef. Because that is what was on sale.

    Cabbage roll, salad, saurkraut, and an Erdinger at the German Schnitzel Haus. Hubs had a craving. I have lunch for tomorrow, too.

    I made palak keema.
    It was delicious... And looked just like the picture, but I served it with homemade paleo garlic naan.
    We have six servings left, lol.
    The peas make it primal, but I bulked up the recipe with a whole 9oz bag of fresh spinach, rather than the frozen stuff, so it balanced.
