Food What's For Dinner Tonight?

    Plan9's A'ight Apple Pie Porkchops:

    8-12 trimmed center cut porkchops in a lightly cooking spray'd Pyrex casserole dish, half a jar of chunky apple sauce (enough to cover meat), two medium sized apples cut into eighths on top, sprinkle with cinnamon, cover with foil.

    Bake on 350 for 25 minutes, flip chops, another 20 minutes and done.

    Last night was chef's salad: Green leaf lettuce, spinach, tomatoe, carrot, onion, turkey, topped with two cheeses, mozarella and sharp cheddar.

    Tonight might be tomato meat sauce (made by your's truly) over sphaghetti, with garlic bread. Possibly a veggie, steamed broccoli sounds good.

    And you can substitute just about any kind of sauce suitable for pork for the applesauce.

    Leek-cauliflower soup. It's just like potato-leek soup...but with half the calories and a fraction of the carbs.

    I'm trying my hand at making Lasagna again. I've failed in the past. Usually burning it. However my cooking skills have grown so I think I can pull it off this time. I'm using both these recipes as a guideline.
    Vegetable Lasagna & Mushroom Marinara Sauce.

    Dairy is optional. It's a very simple soup.

    2 leeks, sliced
    2 pieces of green garlic, sliced, or sub 3-4 cloves of garlic, minced
    1 head of cauliflower, cut into florets
    4 cups no-chicken broth
    salt and pepper to taste

    Saute the leeks in an enamel cast-iron Dutch oven over medium-high heat in a fat of your choice until they are very soft; season them while they saute. Add the green garlic and stir (if using regular garlic, be sure to watch the heat, burned garlic is yucky). Add the cauliflower, stir, check the seasoning. Add the four cups of broth, making sure all of the veggies are covered with the liquid. Bring the soup to a boil, then turn it down to a simmer; let it cook, uncovered, until the cauliflower is fork-tender. Using an immersion blender, blend some of the soup to your preference (we like having some florets left). Adjust the seasoning, and serve.

    Tonight we're having bibimbap again because I'm lazy, it's easy, and we have a lot of vegetables on hand.

    Fired up the Akorn and made soy vay marinated chicken breasts over rice. The breasts were sliced in half width wise to make them more consistent in size. The Akorn makes such a moist environment that the tips don't get dried out.

    I will be trying this soup this week. Good news: I found some awesome Mushroom-beef soup in the freezer. And some coconut lime and strawberry-pecan-chocolate ice cream I've made over the past few weeks. Bad news: I forgot how bad the soup and the coconut milk in the ice "cream" gives one gas. Good news: man is in Asheville, and there isn't a smell, lol. Bad news: my tummy hurtses.

    Last night was a mix of sliced green & red bell peppers, & onions, sauteed in olive oil (cut with a little canola oil) seasoned with garlic, Italian herb mix, & salt. Served over spaghetti, with some hot Italian turkey sausages.

    I'm thinking Mexican of some kind. The last couple nights I've cooked have been Asian (Korean, Thai). Time to go somewhere else on the globe. Maybe Italian.

    Adventurous! Risotto is a good method to master; once you have the steps down (saute aromatics, add rice, deglaze with wine, broth in intervals until rice is done), it's easy to tweak to work with what you have on hand or what's seasonal. The method outlined in this recipe is not one I've ever used--finishing the rice off in a saucepan. Hope it turns out well.
